so today I decided it was a great time to lose my wallet and phone completely off the back of my truck into some ditch somewhere!

my cards and ID's are what they are and have all been turned off or will have to wait till the next work day to get them straightened out.

I have a new phone coming and should be here Tuesday or Wednesday. I have sent the lock and erase code to shut it down and protect as much data as possible.
but the real issue is, that for whatever reason the back-up was turned off on my phone and I now have no way of getting all of my contacts back.

If you are reading this, that means that I had your number in my phone and would like to put it back in my new one. can you please send me your number to my message inbox.

I have 1 acre, fairly flat, 1 spot has an incline, some landscaping in the front yard, there is some garbage landscaping else where that needs to come out, some rocks need to be removed, a bocce ball court will get ripped out.....

so out of the blue this morning, I get a call from SAIA saying that I have a package that I need to come sign for and pick up.  when I got there, I found that it was a really big box that barley fit into the back of the truck.

I honestly had no idea what it was and where it came from because I didn't order anything. 

as I got it home and opened it up, I was beyond speechless.  I called wendy to inquire as to its origin and was told that it was a Christmas/house warming gift.

so folks, what we have here is a berkel 827a-plus 12 inch, mid-tier commercial grade meat slicer.  it has a 4 amp motor, 12" knife/blade, and has roughly a 10.5" throw on the feed tray (how far it goes back).  what that means is … I can slice full slabs of bacon without having to quarter it.

so I am just over 2 years and 50K miles (49,600 actual) on the GMC and it has come time to put some new shoes on her.  The original tires that came on the truck were goodyear wrangler sr/a LT265/60R20 load range E.

For the most part I have been pretty vigilant about rotating the tires every 5K miles and keeping them aired at about 65-70 psi unloaded and 80 psi when loaded and pulling my big trailer.  The wear is pretty even all around and I have only had 1 issue.  The 1 and only issue I had was when I was coming back from Jon's massive farm shop while working on my trailer roof, I must have caught the edge of something along the way and gashed my side wall almost all the way thru.  I am truly impressed that I didn't get a massive blow out and end up injured or have damage of some kind, which is a testament to the strength and durability of these goodyear's.  I was a little cheap at the time and stopped at the local used tire joint and picked up a used tire (exact one) with the same amount of tread left, had it mounted and balanced for $60.  So at 50K on the goodyear's I am down to 6/32nds....time for them to go!

So in my searching and watching what you all are putting on, etc, etc, etc.....I have decided to go with a set of general Grabber ATX.  These come with a 50K warranty, 3 peak certified and ready to accept studs (not that i need them) with no prepping.  these things come at 16/32nds, sipped, very quiet (surprisingly) for an AT tire, excellent traction in the icy rain (which I drove home in the day I got them), etc.  specs side by side are basically identical, so I cant complain or argue that one is better than the other (for now).  I picked these up for just under $1K all 4 mounted, balanced, etc. 

so as time progresses, I will keep this thread updated.

I am going to rant here for a minute.  Why?  Because I am sick and tired of people using religion as a justification for their B.S. opinions/actions/etc!  If you want to follow and live by the word of god, then gosh darn it JUST DO IT, worry about yourself and how you live your life!  The way somebody chosen to follow and live by the word of god has absoutley nothing to do with you!

here is a prime example of what i am talking about!

so I saw a posting on some social media outlet that asked/stated.....and in typical "im a religious person with biased views because I think the way I worship the word of god is better than the way you worship the word of god, and the denomination of faith I chosen is better than the denomination of faith that you chosen" fashion posted the comment/question of

Does the Bible not tell/teach us to love thy neighbor!? Does the bible not tell/teach us to “not judge”!?  Does the bible not tell/teach us to come as we are?!

If I am correct, then why is this even a question?! Why is this even something that is of anybody’s business/concern?! What makes your opinion of "Church Clothes" better or more correct or however you want to put it than somebody else's!?

This is a prime example of “mind your own business”! This is a prime example of why some folks are 2 faced, hypocritical, judgmental, truly believe that their opinion/s matters, MIND YOUR OWN BUSINESS, etc.

Somebody please refresh my memory or if I am unaware of the actual written word of god that says we his children are to be his judge/jury/executioners of his children?!

So the next time that somebody enters a house of worship and does not look like you or act like you or share your same opinions because of the way they choose to interpret the word of god and live their life according to what they believe is the word of god….. shut your judgmental mouth, walk over to them, shake their hand, and welcome them into GOD’s (not yours) house of worship…all with a smile on your face, because then you are truly living the word of GOD!

found this recipe and thought I would give it a try.  relax....the pineapple really does not do anything for flavor, its there more for moisture and to keep it from sticking to the pan.

BAKED PINEAPPLE SALMON

INGREDIENTS:

1 large salmon fillet (about 3 lbs.)       17 pineapple rings, fresh or canned
Kosher salt                  Freshly ground black pepper
3 tbsp. melted butter            3 tbsp. sweet chili sauce
2 tbsp. freshly chopped cilantro         3 cloves garlic, minced
2 tsp. freshly grated ginger         2 tsp. toasted sesame oil
1/2 tsp. crushed red pepper flakes      Toasted sesame seeds, for garnish
Thinly sliced green onions, for garnish      Lime wedges, for serving

DIRECTIONS:

1. Preheat oven to 350°. Line a large rimmed baking sheet with foil and grease with cooking spray. In the center of the foil, lay pineapple slices in an even layer.

2. Season both sides of the salmon with salt and pepper and place on top of pineapple slices.

3. In a small bowl, whisk together butter, chili sauce, cilantro, garlic, ginger, sesame oil, and red pepper flakes. Brush all over salmon fillet.

4. Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, and broil for 2 minutes, or until fish is slightly golden. Garnish with sesame seeds and green onions and serve with lime wedges

So my 12 or 13 year old grill is about shot. 

I have been looking at many different options to include blaze, broil king, char broil, kitchen aid, weber, etc.  I have seen prices from $3k all the way down to the $99 specials out side of the big box stores.

I think i have settled on the weber genesis ii 435 series.  Does anybody have one of these?  Does anybody have hands on experience they can offer?

FLAME GRILLED NEW YORK STRIP STEAK WITH BOURBON MUSHROOM SAUCE

INGREDIENTS:
NY strip steak
2 NY strip steaks, 2-3 inches thick             3 T SPOG (salt, pepper, onion powder, garlic powder)
4 T butter (reserve for when steaks are resting)

bourbon mushroom sauce
2 tbsp butter             1 large shallot minced        1 clove garlic minced
1 1/2 cups sliced cremini mushrooms or other mushroom of your choice
2 oz bourbon             1/2 cup beef stock          1 tsp nutmeg
1/2 cup whipping cream       1/2 tsp chopped fresh thyme or 1/4 tsp dried thyme
salt and pepper to taste   

PREPARATION:
1. Trim the NY strip steaks and remove fat chunks.  Season the steaks generously with the S.P.G.O. and let rest for 45 minutes so the seasoning can penetrate the meat.

2. Set up the grill to indirect smoke at 225F.  Use a blend of oak and hickory wood for a good flavor.  Place the steaks on the grill and insert a temp probe in one of the steaks and smoke until the steaks reach an internal temperature of 110-115F.

3. While you wait for the steaks to get to temp, start the sauce.  Begin by sautéing the mushrooms over medium heat in the butter until they shrink and just begin to turn a little brown at the edges.  Season with salt and pepper to taste.  Next, add shallots and garlic and sauté for another minute or so until they soften.  Add the bourbon and let that cook off for only a minute.  (If you are cooking over gas, watch out so the bourbon won't light on fire.  If that happens, remove the pan from the stove and let the fire die down.)  Then add the beef stock and the nutmeg and allow the sauce to reduce by half.

4. Finally, add the whipping cream and thyme and cook for only a minute or two more until the sauce is the right consistency.  Season with salt and pepper to taste.

5. When the steaks have an internal temperature of 110-115F, remove them and place in some aluminum foil and place a couple of slices of butter on top.  Cover and let rest until grill is ready for direct grilling.   

6. Set up the grill for direct flame, maximum heat.  When the grill is hot, remove steaks from foil and sear all sides of the steaks quickly and then let the steaks rest for 5-7 minutes.

7. Slice the NY strip steaks, spoon the bourbon mushroom sauce over the top and serve.

Share Your Recipe / eazy homemade chorizo

HOMEMADE CHORIZO
PREP TIME: 15 min COOK TIME: 0 min TOTAL TIME: 15 min

INGREDIENTS:
- 3-LBS ground pork
- 2 white onions, chopped
- 6 cloves garlic, smashed
- 1 cup apple cider vinegar
- 1/4 cup New Mexico ground chili powder
- 1/4 cup paprika
- 2 tablespoons ground cumin
- 2 tablespoons ground coriander
- 2 tablespoons Mexican oregano
- 2 tablespoons kosher salt
- 2 teaspoons crushed red pepper flakes
- 1 teaspoon fresh cracked black pepper

INSTRUCTIONS:
1. Combine all ingredients, but the pork, in a food processor. Process     until well combined and smooth.

2. Place ground pork in a large bowl and add the sauce. Using your     hands, mix until thoroughly combined.

3. Refrigerate up to 3 days or portion into labeled zipper top baggies, by     1/2 pound (approx 1 cup) increments, and freeze for up to 6 months.

NOTE:
This makes 3lbs worth of chorizo, feel free to divide mix up into 3 equal portions and you can freeze what you don’t use for the next.

who on here is a tomato growing expert?  i am having some issues with a plant and need help.

the first picture is the brand of plant that i got...its supposed to grow these huge 2-3lb tomatoes.

the second picture is what i gave the plant a drink of when i transplanted it from the little grow pot to the huge 20 gal pot that it sits in now.

pictures 3 and 4 are of the leaves and what is really concerning me.  all of the leaves seem to have shriveled and look as they are about dead/in shock but have some life left in them because they are still pretty green.

pic 5 is of a few of the leaves at the base of the plant, and the yellow spots are of concern as well.

picture 6 is of the 1 tomato that has grown so far...not sure if that is what its supposed to look like or if something has gotten up in there???

when I got the plant, repotted it and put it out, we got hit with a pretty good amount of rain.  I made sure that I had good drain holes in the bottom of the pot just because I didn't intentionally wanted to make sure that "I" didnt cause root rot because the pot and soil retained too much moisture.  also, it gets full sun from about noon until it sets in the evening.
