well, #2 is out of cold smoke and now just trying to get it up to temp.  should be about another hour or so and it should be done.

It took 8 hrs total for cold smoke then to come to temp. 

It's now vac sealed and in the freezer

i got my last quarter split, injected and into brine.  the first one comes out in 13 days, the second one 15 days.
