I have about 20 more deg until I can wrap this up tonight.....

well this thing got done about 2320 last night, it got vac sealed right away and into the freezer.  took a little piece and I must say that it tasted great.

the second one comes out of brine tomorrow and then the rinse and smoke process starts all over again.  I will update with #2

Well Nate, I wouldn't have wasted the vac. bag, that thing would have been put in the  fridge for lunch and dinner today.  :beercheers:
