Paul Prudhomme has a Blackened Steak seasoning that is cooked in a cast iron skillet with butter. It smokes a ton so I do it outside on the grille (put the cast iron on the grille). But man oh man is that good! Cant beat steak cooked in butter under any circumstances! Take it on fishing trips....over a campfire its even better.
