Title: Hatch Green Chile stew

Guys

I got hooked on Hatch Chile stew after eating at the Cattle Baron in Ruidoso New Mexico and haven't been able to find a recipe that I like. Has anyone tried a recipe that they like and is willing to share?

12-15 Hatch green chilies ( Kind of late for fresh so I used 32oz of roasted hatch green chilies
2 lbs of pork shoulder cut in 1/2" cubes ( I used a 3 1/2 pork loin)
2 tablespoons vegetable oil
1/2 cup of onion finely chopped
2 cloves of garlic minced
6 cups of chicken broth ( I used 8 cups because of the extra pork)
1/2 teaspoon Oregano
1 teaspoon of salt
1 teaspoon of pepper
3 bay leaves
1/2 teaspoon cumin
10 ounce tomatoes (forgot to get so I used 1 can of ro-tel original )
3 large potatoes cut in 1/2" squares
2 tablespoons butter
2 tablespoons flour

Broil green chilies turning often to evenly darken the skin but don't burn
remove from oven and cover to steam the skins off

take pork sprinkle with salt and pepper and brown with onions & garlic in oil for 5 minutes

add broth, spices and bring to a simmer for 1 hour

Peel skin from chilies chop and add to pot with seeds simmer for 30 minutes

add tomatoes and potatoes (add a cup of hot water if needed) simmer until potatoes are done

Melt butter in a skillet, add flour and cook for 2 minutes stirring constantly and add to the pot


I have to say it even tastier the 2nd day
