I am prepped and ready to start canning 4 cases of tomato's tomorrow morning.
I am looking at doing 2 cases as sauce and 2 cases of stewed.

How do you like them plastic jar cases? Looks like a good time, decent amount of work but the pay off is always great. We love doing tomatoes here.

Nate, you've inspired the wife and I to do a salsa batch this year. Been several years since we had our large garden but I saw this post and decided I miss her canned salsa in the winter.........
she agreed we need to do it!

So here is roughly 50-60lbs done up for sauce, i have roughly 50lbs left for stewed.
By the way, those are 22+QT pots about 2/3 full.

So i actually ran out of jars to finish, guess ill have to pick some up tomorrow on the way back from the gym.
So 100lbs of roma tomatoes netted me 21qts of sauce and 21-24qts of stewed tomatoes.

So when all said and done, 100lbs of tomatoes got us 7 salsa, 20 stewed and 21 sauce

Nate, Wasn't sure if you had a stealth victory garden or made a score at a farmers market. They all looked nice and ripe.
As far as the spelling or vocab nazi's... this is what I always think of..

The first 8 of many many more QTS of tomatoes. As you can see in the back ground, i have to more counters with tomatoes that will be ready to go in 2 days.

Looks good Nate, mine have peaked and are declining in the 100degree constant heat now. Ive harvested nearly 100 lbs of tomatos this year. Nothing else did as well, but I’m about to pull up and get ready for fall.

Yeah, they are coming pretty fast now. I am not sure how many more canned we will do, but whatever is left will gat made into sauce.
