HUEVOS RANCHEROS (ranchers eggs) There is a place called "the new clock" here in the northeast portion of el paso, tx.  This is a pretty good greasy spoon breakfast joint, and one of the things that I love from here is their Huevos Rancheros plate.  so this wonderful easter morning, seeing as I am alone, I thought I would attempt a re-creation of this. we started of with 1 layer of a small flour tortilla that had a schmear of some spicy re-fried beans, red enchilada sauce from Hatch, NM, a sprinkle of onions and cheese. there were 3 layers to that.    next, I heated up the #8 cast iron with a little bacon grease and fried up 3 eggs over easy / medium  slid those on top of the tortilla stack, sprinkled a little cheese on top and put a good spoon full of some homemade salsa on the side.  and here is the plated shot with a glimpse of the inside of this wonderful concoction.  here is the fork shot as well.  enjoy!
