So today we started off with 3 gilts roughly in the 250lb range.
It took us probably 2.5 hrs to process all 3 so they can hang for the night.
Tomorrow is processing day......please ask the father for patience and my sanity please.

Sawzall.....lol......its a lot easier than a hand saw.

Hot dang! We did a pig 2 years back, some real good eats! Wish I were closer to learn to better process. I managed but probably could have been better.
You have a hand in raising them or did you just buy them from the raiser?

No hand, straight from the farm and not a feed lot or commercial barn.

That’s awesome, might have to make a road trip just to eat some of that good pig! Can’t imagine the delicious plates you’ll cook up.

Does look good. Had a bud sometime back give me some from a hand kill up near berryessa. It was great!

I am interested in how you will cure the hams and bacon. Nothing better then home raised.

Well all 3 pigs got processed, i didnt get any pics and for the good of the group my tongue is very sore and my blood pressure was very high all day
