well folks, I had to update the pellet cooker!
this is the Louisiana Grills Champion series pellet grill/smoker.
I believe they are only available from Costco right now (they are Canadian made, but at least its still north American.....)
there was probably 100+ lbs of packaging there.

here are a few pics of around the unit

here are a few pics with different size hotel pans.
you could get 2 shallow pans on the bottom rack in the main chamber, with use of 1 or 2 shelves on top of them. depending on the size pan, you could get a few of them in the vertical cabinet.

so as I was assembling everything, here is what I observed.
1. the metal is not paper thin, but then again its not 1/4 steel
2. everything went together pretty easy
3. clear and concise instructions with pretty decent pics
4. for something made in Canada its pretty decent
oh and here is the bad news about these units!
I called to order the front shelf and the cover and was told that they do not even have them in stock yet and I cant pre-order them until they get them in stock.
the covers are supposed to be in by end of may/beg of june, and the front shelf is not supposed to be in until aug..............
not sure about that, but then again the young guy I was talking to didn't not know what he was talking about and said that I had to wait a minute while he looked it up.........SMFH
the covers are supposed to be around $80 and the front shelf is supposed to be around $100

so I did not get the traditional inaugural fatty cooked today, but I did get the initial spray and burn in.
the temps are pretty even in the main chamber, and about the same in the other 2 cabinets. I did test this with about 8 oven thermometers through out.
I have a couple funerals to attend tomorrow, so it will have to be Friday or Saturday when I get the traditional inaugural fatty run through it.

Looks like quite the unit Nate.
All this talk of a fatty...did you post a recipe somewhere, or was it my buddies talking about it?
I might want to do one of them this weekend also...
Interested in how this works, I'm wanting a smoker at the cabin, but I don't feel like building another.

Nice looking unit there Nate - is that size hopper standard, and about how long will a load feed the beast before you have to pour more pellets in?

Nate nice unit and great pickup. what's the temp diff between main and side chamber?
Could you cook ribs in the side while a butt or brisket on the main?

Charles, hopefully this will help: So yesterday when i was doing the initial burn in at 450, i noticed that temps right at the grate were spot on, and up on the middle shelf it was about 25 deg hotter. The chamber to the right showed about 50 deg less and i saw 150 deg less in the upper chamber.
Now, that was with everything wide open. I will document the temp swings tomorrow when i do the first fatty 's. I will do one in the main and one in the right lower chamber.

I've heard that in regards to the fatty.
I'll take my chances, and worst case I eat more...
Thats too much power for me to sustain, dang, well I might be able to, but not for long enough...

Here is the inagural fatty cook, and i even did up 2 things of meat loaf to go with them.
1 fatty is a maple and the other is a regular.

And here is a pic of just how clean/efficient this thing burns. This was after the 4 hr initial burn/seasoning at 450deg.

About 1.5 hrs in with the temp set at 275.......

Looks like a winner.
A little temp variation, but pretty good.
Super clean for four hours that hot...

So, are you trying to do more cooking catering for work now? Or was this just being a nice guy and helping out? Read the story, just curious if your taking the nater-q on the road.

No where.... poor girl got thrown into being a plt sgt for an AIT course here. From the sounds of it they will be sending her back to Jackson for the rest of the drill sgt training next fall and she'll finish out her stint as an AIT drill sgt vs an AIT plt sgt.
