Did some applesauce in the pressure canner last night. 10 lbs for 8 minutes. I had an inch of head space. I didn't pack it down but I tapped the jar to get it down so there were no air pockets. Is it suppose to swell up like this?

yes, it will swell because you are taking all of the air out and creating a vacuum inside of the jar.

When I can peaches and pears in the pressure canner they shrink. The applesauce swelled up. Learn something new all the time.
