15-20 habeneros
1/2 cup vinegar. Your choice of ACV or White. I used white.
4 tsp EVOO
4 tsp sugar ,white or brown. I used white
2 cloves of garlic. I used 3 big ones
1/2 tsp salt, I used a bit more
Rough chop the peppers after pulling stems. You can scoop the seeds to make it milder but what’s the point??
Sauté in EVOO for 8 minutes or so over low heat covered. Stir occasionally. Then add garlic and sauté for another 3 minutes. Then add vinegar salt and sugar and bring to a simmer a simmer over low heat for 10 minutes covered. Then let cool covered for 10 minutes.
Purée in blender or food processor until smooth. Add a little vinegar if you need to thin.
Bottle and enjoy.
Those old Siracha bottles come in handy.
Next time I’m going to add fresh mango in place of some of the sugar.
