Title: Leftover undercooked brisket

So since i had some leftover undercooked brisket, i was thinking of what to do with it besides boring street tacos type of things.

So i assembled some ingredients, chopped up the brisket and onions!

That looks great and the brisket didn’t look under cooked to me. I did get trichinosis once so I’m probably not the guy to ask about judging meat by looks though.

I like to take screwed up smoked things and make chili or enchiladas!!

Last year I ended up with prime rib enchiladas and I tell ya what. The kids have asked for it,   Hard to spend that kind of $$ on enchiladas on purpose
