so I had some left over pulled pork from my military retirement spread and thought I would make some pulled pork breakfast tacos.



I started with a very liberal schmear of a bacon onion dip (I really like this stuff cold, because I use it like a cream cheese type spread.).  here is the link to the restaurant that I this recipe from.

after I reheated the pulled pork that was not sauced, I added a little of ROXY's S.C. Mustard Sauce.

I then fried up 2 eggs to a little over easy.  (I love the runny yoke!)







I then added them to the top of the tacos.  my avocado was bad so I didn't get to add a cool creamy ingredient / texture.... :o

I have never ground more than say 15lbs at one time.  but you being a larger family, you may want to look into an electric version like the ones I posted above.  yeah they are a bit more than the kitchenaid one, but they will pay for themselves in short order.

Wilbur,
I use brisket because I don't have to add any additional fat like I would using another type of cut.  if you use a choice or select grade brisket, trim a bit of the really hard fat off and grind it, you will end up with basically 80/20 ground beef.

lets be real here, I am not trying to win any james beard awards for the house (different types of exotic cuts / meats) and when it comes to the all mighty $$$ brisket is already leaps and bounds above the lips and a$$h*&^s you get with regular ground beef.

now if I had true access to live cows, I would be buying a full side straight from the processor.  I would know what it was fed, inoculated with, and how it was handled / processed.

one of the things that will be implemented in my permanent residence will be a truly open kitchen with some industrial grade equipment as well as having a full working outdoor cooking / working area.

I forgot to take a pic of the end result.  out of the 10.56lb brisket I got exactly 9 lbs of finished product.

I go with just brisket, because when you start adding in other stuff like you posted you cannot tell any difference and the extra work and $$$ is for nothing?!

now don't get me wrong when it comes to operating space, I LOVE working in an industrial kitchen because of the room!  but in all reality, if you have a good kitchen setup like myself and kyle then you will not want to deal with industrial type stuff when it comes to cleaning / sanitation.

here are a few pics of my kitchen setup.  to be honest, I REALLY HATE the low counters!  when you stand 6'2" it really hurts your back having to bend over for a long time.  but when you have a wife that is vertically challenged and VERY TOP HEAVY you learn to deal with the low counters.

ok so this is how this works.  by the way sean, splash is supposed to be called after don replies to it.....;D

so as a forward observer (the guy who calls for and directs the artillery and close air support on to the enemy), I would give an initial radio transmission to (the fire direction control center) FDC with a description of the target that I am trying to destroy (this is calling for a fire mission). 

the FDC would then send me back the information of the fire mission and would say "shot" over the radio to let me know that the artillery round that I called for is in the air heading to my target. 

when I hear "shot", I would reply over the radio "shot out".  this signifies that I am aware of what is about to happen and ready to observe the target and make adjustments if needed.

I then observe the target and when I see the round impact on or near the target, I say over the radio "splash".  this signifies to the FDC that the round has impacted and to stand by for corrections / adjustments or battle damage assessments.


so to break this down to this conversation:

the "SHOT":
bobby called don old and said he needed to have a old person chair installed for the stairs because he is unable to climb them.

the "SHOT OUT":
nates way of saying shots fired and rounds are in the air.

the "SPLASH":
should have been kept in wait for don to reply.  (but we all know that tankers are to impatient..........#pokesean....;D)

another way to think about all of this would be:  "drops mic and walks away"




now, another way that most combat arms folks (artillery, infantry, and armor) use this process is when flatulence has been leaked.

the flatuator will say "shot" as a warning to the other Soldiers that a NBC (nuclear, Biological, Chemical) environment is about to exist and to evacuate the location if they do not want to become a casuality.

the first recipient to receive the confirmation of said impending NBC environment or chemical down wind message will reply with "shot over"

now in this scenario,

splash is only used by the flatuator!

I use an app called PDF Maps by Avenza Systems. Through this app you can download USGS Maps for free, and it gives you several grid options to include MGRS. There are also a lot of maps available for purchase. It does not give you a "track" or display speed, altitude, etc. but it does give you a real time location. And it's cheap! I've been using it for years, and one of my good friends has a company, CartoTraks, which makes off road trail maps of public areas (hiking and 4x4), and off road parks for a small fee. Great company (just him and his wife)!

maybe this company that you speak of needs to be brought to the forum's attention in the favored companies or the vendor area.......
