so tomorrow I am going to attempt a large cook with 4 different meats
1- about 7 lbs of meat loaf and a small little one for my 2 nephews that have strange food allergies
2- 3 spatchcock chickens to put in the freezer
3- an 8lb pork butt for the neighbor....when I gave him a taste of the last one I did, he messed himself and asked that I do one (he bought it) for him and his family the next I start the smoker
4- and 3 smoked turkey legs
I should be starting this early in the morning (depending on how late tonight gets)............ill post pics as we go!
-
And were on at 0730 with a temp of 275-300.......

I don't know about the Fister thing,
But I can testify to a couple of fists that I never saw coming...Like in that biker bar in Yuma me and some Marine buddies visited one Friday evening...Like that

He told me about jumping out a barack window to get into a tussle once but this sounds like a different story....
-
the first chicken along with the backbones finished at about 4 hours, the other 2 chickens finished about 35 minutes apart after that. when all 3 chickens were picked clean, I got about 6.5lbs of meat put into 1lb bags and then into the freezer.
the turkey legs took about 3ish hrs.
the pork butt took about 9hrs, got shredded and delivered.
the meat loaf is not pictured, cause its in the fridge till tomorrow when I slice it up and put it in bags for future use.
all in all a good day and lots of meat got put into the freezer.

looks good nate. Where do you buy your pellets and do you notice much of a difference between the types of wood pellets?
-
Since you have an academy sports in your area, they sell B&B brand pellets which are supposed to be approved as one of the top brands. Walmart may have them as well. If they do, they should be about $11 for a 20lbs bag.
I mostly use hickory for just about everything, every once in a while i will use some apple when i do pork ribs.

Didn't write about that one
But remember the story about my crew chief, "Trigger?" He's the one who ran off the ramp wearing NVG's, smack into one of those sororo cactus trees

I've used BBQ Delight quite a bit. But I just got 120lbs at BBQ Pellets On Line.com
I, too use hickory more than most, but have used pecan, mesquite and cherry (for my turkey)

Sounds like one of my baseball team brawls....started by the littlest guy on the team of course.

When we did that large cook it for work we tried some different types of pellets to see and honestly I didn’t Tate a bit of difference in pellet type, the flavor on most of our meet comes from our seasoning. I stick with winco $6.99 for a bag
