Hey did you guys know when your scoring knife gets dull, and you take it apart to change the blade and drop them down the floor register, that you can score drywall with your wife's butcher/meat cleaver? For those of you doing such projects I felt I would share this new found knowledge.

norm, best advice I can give is to just give in and let the meat take over........and how did you get a hold of kays kitchen knife when you know that you are not even allowed to look at or in the direction of her kitchen......hahahahaha (hopefully you put it back washed before she got home)

Brisket was 14lbs. Pork buts we’re 6-7. One butt was stubborn and took 2 hours more than the others to come to temp and be tender. It was cold last night and I burned 20lbs of pure mesquite pellets

does rec tec have the thermal blankets for those?  thats a small brisket, is that for you and the family or is that going for your christmas party?  if its going for your christmas party, dont blink when its served because it may disappear pretty quick.

less overreach is always a good thing...agreed. Fed land is often not available for use. There are many large areas of Fed land that are heavily restricted. The grand canyon comes to mind.

No doubt much of this is true. But Trump is the real deal. If he can do something right by real Americans while pissin' in the wheaties of folks like Romney, I'm sure he relished in killin' a bunch of birds with one swipe of the pen.

Note: Seems like ever since Obummer's reign (Aptly chosen word) our president is more and more like a king. Ruling through executive order. I love it when the guy in the white house lines up with a free and constitutional America, but hated it when the Muslim homosexual ruled the land.

I've been amazed with some of the cheaper knock offs.
This is definitely in that category.
A lot of light in a small package.

That's impressive for the size. What's the power supply cr123s, probably two?

Wife and I carry a flashlight almost all the time. Just the small ones like the Streamlight micro stream, or others of that size.

We have a wide range of surefires, but my go to around the house, when the light isn't misplaced is my rechargeable streamlight, polystinger.

So I have a few flashlights.

Some cheap, some not so cheap.  I was a Surefire snob for a while but the chinese and others have really stepped up their game and there are several lights that are well made and much more affordable.

Case in point:  I ordered this Fenix PD35 TAC from Amazon on the recommendation of a friend.  I have 4 fenix lights, including headlamps, one cell mini lights with 200 lumens, etc. 

This light claims to have 1000 lumens, strobe and multiple modes down to 5 lumen output.

When I got to the hide this evening it was dark so I thought I would put up against my Surefire M4 Devastator with a retrofit turbo LED head.

I have to say this little $73 light is pretty amazing for such a small package. It puts out a tremendous amount of light and much more in the first 25 yards.  The longer, focused reflector on the M4 makes it a pretty decent long range beam but it doesnt come close to the light output of this little light for lighting up the area immediately around you.

I recommend you check one out yourselves.

smoked chicken and turkey from the smoked turkey legs I did a while back pulled/chopped and ready to go into the stock.

oh and corn fried in bacon grease......why bacon grease........because bacon grease  :beercheers:....lol

so I spent yesterday and today boiling down all of the above 3 times, removed all remanents, and not I just have stock chilling in the fridge so I can strain the layer of fat from the pot.

tomorrow I will boil it down once more, add the chicken, corn and the other stuff.

I started on the stock for some smoked chicken and smoked corn chowda.  ill reduce this down a couple times today/night and get to making the chowda tomorrow. 


Ingredients:

- 2 cans corn or 2-3 ears of fresh corn on the cob shucked, grilled and cut from the cob
- pulled chicken from 1 smoked whole chicken
- 1 red bell pepper small diced
- 1 orange bell pepper small diced
- 1 yellow bell pepper small diced
- 1 med yellow onion small diced
- 1-2 Jalapeno's small diced
- bacon (optional)
- 4-5 QTS homemade chicken stock
- 1 QT heavy whipping cream or cream soup base

chicken stock ingredients and directions:

- chicken carcas's (i usually use 2 per pot)
- 2 yellow onions quartered
- 1 small package of celery chopped up into 1 inch pieces
- 1 small bag of carrots chopped up into 1 inch pieces
- a couple jalapeno's halved
- sodium free chicken bullion (to taste)
- 1 large pot
- water to fill pot to within 2 inches from the top

directions:

1. put carcass into pot
2. add all vegetables to pot
3. add bullion to pot
4. fill pot tp with in 2 inches from top
5. bring pot to a boil and reduce contents by 1/2 or 3/4
6. refill pot and repeat step 5
7. once pot has reduced a second time strain all contents
8. throw away all bits from liquid
9. put liquid into refrigerator until all the fat has solidified on top of the liquid
10. remove fat and throw away
11. bring liquid to a boil


chowder directions:

1. once stock has come to a boil, add all vegetables and meat and let it come to a gentle boil for about 45 minutes
2. add heavy cream or cream soup base
3. if you like it a little thicker, you can use a little cold water and corn starch slurry
4. once chowder is at your desired thickness remove from heat and serve.

Well, thanks to a member donating $50 just now, we are off and running on the Christmas 2017 project. That's an early start to what has become a really cool thing we get to do here for some peeps we don't even know.

I think that many of you get about as excited about this as I do. Heck last year I was out in little girl stores buying stuff I had no idea about, and it was FUN! This, honestly is one of the coolest things we do from this RealMan corner of the interweb.

So, no decisions have been made yet but I do have some candidates for our giving this year. First is a place called "The Talbot House." It is a place where children of drug addicted parents who are in rehab get to stay or are cared for from afar while their parents try to fix their broken lives. There is a christmas gift tree out that I could pull names from, as in a gift per name and see what we could do to sow some happiness into an otherwise bleak situation.
Second on my list is a local old folks home. Living there are some guests who no longer have any family and are wards of the state just living out their days. I don't know how many people there are or how we might respond, but that would be a worthy cause. And frankly I DO NOT care about this policy or that which restricts things like not playing Christian music, or saying "Merry Christmas" or speaking of our savior. In a word, "To Hell With All That!" Well, a bit more than a word, but that's how I feel and given my size and fearsome (Ugly) look, no one will say anything when I raise a might word of praise for our king!

Next (and I may be leaning this way a bit, I know of a woman with two girls, one four, and one older, living in an apartment, whose worthless husband walked out abandoning his family. We could sow into that family like last year's effort.

So with no particular goal in mind, I guess we're off to the races to make a CHRISTmas ho-down for some needy people. Like always we will do it mostly anonymously and keep our generosity between us and our God (The way he likes it).

So boyz and girlies, if you are so so convicted, donate away and watch the amount grow over on the donations page. And check this out...a DP (Don Prediction): This year's amount will be more than last year's amount...and I bet (because the Lord likes this) it will be a bunch more!

Oh and if you have something to say as far as which direction you'd like to go with our giving this year, please share it here. Of course, like always, I won't pay any attention at all and end up doing whatever I think, but at least you'll think you influenced the decision. And that will make you a happy person!

option #1 helping the children at "the Talbot House"?

option #2 spreading a little love and cheer for those that have no family left and trying to make their little bit of time left on this earth a little more merrier?

That HD cover is rated to hold 1600# which is really cool IMO, obviously it holds Nate with all those foot prints. My SE model is only rated for 400# and thank goodness I don't weigh that much......
