First off

Bob, i hate you for that recommendation of salsa..... :beercheers:

Honestly, thank you!

So when all said and done, 100lbs of tomatoes got us 7 salsa, 20 stewed and 21 sauce

So i actually ran out of jars to finish, guess ill have to pick some up tomorrow on the way back from the gym.

So 100lbs of roma tomatoes netted me 21qts of sauce and 21-24qts of stewed tomatoes.

I take it we were in close proximity to your stomping grounds?  If you are that close to that meat nirvana, I'm surprised you aren't on your way to becoming "Nate JR" with a smoker, Dutch Ovens, cast iron galore!

Yes you were in the area. Their price's have gone up so I haven't been there in awhile. I have a cast iron skillet, but a smoker is verboten at the apartment. However I've been looking at getting a house sometime soon, so who know's what'll happen then.

Tell us more about this..........:stickpoke

So here is roughly 50-60lbs done up for sauce, i have roughly 50lbs left for stewed.

By the way, those are 22+QT pots about 2/3 full.

Yesterday morning around 9:15am - beef & chedar stick for mid morning snack!

We actually stopped on the way up and back.  Cooked every lunch and dinner over wood fire and a tripod hanging grill lakeside.  Fishing was awful with one 3lb smallmouth being the only action; I enjoyed the battle and returned him to swim again.

Ah I was at work by then.

and make one of these:

and here is the end result of the 3 briskets.

all in all, this thing handled everything I threw at it today like a champion.....lol

I did not get a group shot as thing finished at different times and I was prepping service and washing dishes in between times.

the first brisket was done at just about 6-7 hrs and the last one was done about 1.5hrs after that. so for 14lb average briskets at 275 I would say not bad!

the only problem I had with one of them was just a bit of a crunchy bottom cause it got over cooked........oh well knowledge for the next time..........thank god I am not doing briskets tomorrow, just 4 racks of baby backs, some wieners and brats and jalapeno poppers.

Nate, are you set up for stuffing casings. Not that forming rolls doesn't work. Friend does lots of pepperoni and many kinds of sausage.

I do have a stuffer bob, i believe its a 5lb one from lem.  Speaking of the stuffer, i think its been 2 years since i made brats.....

This morning i pulled out the 12 lbs of cold sausage, and got them all vacuum sealed and put in the freezer.
