I'm in if you'll triple our pay, only fire us on the third monday of the month, and Nate cooks over an open fire twice a week!  Last request, the parking area needs to be lined with mulch and at least one Prius down-range.

HUEVOS RANCHEROS (ranchers eggs)

There is a place called "the new clock" here in the northeast portion of el paso, tx.



This is a pretty good greasy spoon breakfast joint, and one of the things that I love from here is their Huevos Rancheros plate.



so this wonderful easter morning, seeing as I am alone, I thought I would attempt a re-creation of this.

we started of with 1 layer of a small flour tortilla that had a schmear of some spicy re-fried beans, red enchilada sauce from Hatch, NM, a sprinkle of onions and cheese. there were 3 layers to that.







next, I heated up the #8 cast iron with a little bacon grease and fried up 3 eggs over easy / medium



slid those on top of the tortilla stack, sprinkled a little cheese on top and put a good spoon full of some homemade salsa on the side.



and here is the plated shot with a glimpse of the inside of this wonderful concoction.

I threw together a scramble consisting of:

2 Eggs
1/4 cup Monterey jack cheese
1 Potato, Russet
4.7 oz Lemon and Garlic pork tenderloin (leftovers)
Sriracha (liberal amounts)
1 Tbsp ketchup

Sunday I made biscuits and gravy with a couple eggs sunny side up.

I do have a vacuum sealer. I buy marinated chicken breast or flavored brats (Whiskey peppercorn, and etc..) and then vacuum seal them.

If, I don't work this weekend, I'll have to go back and get some more. MAYBE I will acquire photographic evidence of the biscuits and gravy w/cheese curds.

Did you guys make the tortillas? If so can we get some more details? I've got a recipe for tortillas that works well but i like having more than one of pretty much everything.
