Cajun Dirty Rice Recipe?

I'm looking for a "real deal" recipe to work with. I'm doing Turducken and collards for my step mother for mothers day and want to impress. Online recipes for dirty rice just seem to "citified" for what I'm trying to do. Anyone with LA roots on here or got a meemaw somewhere that will part with her wisdom?

See if you can look up a Ju-sten Wil-sOn recipe on-line .....he was a hoot when he was on TV and a true country cook! (Justin Wilson)

Love it. everything I had found was just livers and I think the gizzards and even some hearts would be awesome. (now if I could get a bunch of freshly harvested ringneck hearts, possibly a trip out to the Midwest behind some pointing type canines and a glass of burbon, that would maybe definitely add to the authentic flavor right?)

Well, that could be a plan for the fall for sure!  Looking to get back to Iowa this October/November now that the numbers are steadily increasing after a crash about 6 years ago.  Had access to close to 10K acres scattered a short drive south of Iowa City at that time - will be working to put that back together.

Dinner was a huge success.... but no proof so it didn't happen... I did get my flag pole up though.
