I get up earlier than everyone else so my meal is usually breakfast.

I had some scotch eggs, with a big glass of ice water and 1 everything bagel toasted with a little butter.  oh and I baked it at 400 deg for 30 minutes.  the frying part didn't really excite me.

In honor of my departed grandfather.  Fried bologna sammich. I never saw him eat bacon on a sandwich. Plenty off the plate but never on a sandwich.

No worries, Bobby.  Its all good.

My grandfather only made it through the 6th grade but was one of the smartest people I ever knew.  He was a heavy equipment mechanic and had some great sayings.

My favorite:  "could have been worse... could have been me"

And one of the only people I know that actually liked head cheese.

So breakfast consisted of:

1 potato cubed and seasoned with cajun seasonings, 2 scrambled eggs and some mozzarella cheese all hashed up together in a delightful pile covered with sriracha sauce. Washed down with some lowfat chocolate milk, 1 LTR of water and a cup of coffee.

Breakfast...one of my favorite meals. Back in February the wife and I changed eating habits (for good) and went full paleo diet (think cave man...nothing processed). By summer (3 months) I had dropped 30lbs and have keep it off.

Breakfast for me consists of 3 scrambled eggs from the BYCs and a chopped up sausage (100 natural no nitrates etc) with some Herdez salsa Verde. Ill snap a pick tomorrow morning!

Tate's Spanish eggs benedict.

SOP until you get to the hollandaise sauce.

English muffin, split toasted and buttered
Canadian bacon fried on both sides like baloney on top of muffin halfs
poached egg on top

Spanish hollandaise:
2 large egg yolks
3/4 stick of butter
1/2 tsp salt
1/4 tsp fresh black pepper
1-1/2 Tbsp fresh lime juice
2 Tbsp fine chopped cilantro
1 seeded and finely diced jalapeño
1/2 very ripe avocado diced

In a blender, combine egg yolks, salt, pepper, and lime juice. pulse a few times to combine
in a small sauce pan, slowly heat butter, constantly swirling the pan until the butter is completely melted and foaming
with the blender on low, slowly drizzle in the melted butter until it is completely incorporated
speed up the blender to medium and add the cilantro, jalapeño and avocado and blend until completely smooth
return to sauce pan, covered on very low heat until ready to serve. I lid up and tuck it in the oven on keep warm cycle to hold it for up to an hour. if it starts to get too thick, you can whisk in a little water
throw a little cilantro and Mexican cotija cheese on there and you're eating in style

Edit: this was the wife's plate, and she wanted a slice of cheese on there, so of course I obliged her.

Egg, sausage & hash brown bake:

2lbs breakfast sausage
Package frozen hash browns
2 cups milk
6 eggs
1 cup grated cheese

Brown sausage and drain
Cook hash browns
Layer sausage and hash browns in greased 13 X 9 baking dish
Beat eggs and milk and pour over layers then top with cheese
Bake in 350 oven for 35-40 mins and serve

I fired up the flat top this morning and made some fried eggs, taters, onions, mushrooms, jalapenio's.  there were 2 strips of homemade bacon and a little country gravy to top it all off.

Dropped them into the hot pan that was awaiting them taters by getting some extra virgin olive oil nice and hot. Once they started to cook, I herded them into a corner of the pan then liberally coated them with some cajun seasonings. Once the taters reached optimum levels of both tasty and texture, I poured the egg mixture into the pan and proceeded to mix it all together in a tasty tasty pile. Then once the eggs were cooked to my exacting standards, I unceremoniously dumped them onto my paper plate, and gave them a generous topping of both Sriracha and a bit of ketchup.

Then made a cup of coffee with my Keurig machine.

IHOP rocks.  We got back about 12.  Clocked about 14 miles.  She passed out on the couch.  I went to work on the 7 20ft tall crepe myrtles and gave them a big hair cut from a 14 ft step ladder.  Just got done and almost all of it on the utility trailer to take to the burn pile.  I'm a worn out puppy.  ABout to shower and get some dinner and pass out.

so I had some left over pulled pork from my military retirement spread and thought I would make some pulled pork breakfast tacos.



I started with a very liberal schmear of a bacon onion dip (I really like this stuff cold, because I use it like a cream cheese type spread.).  here is the link to the restaurant that I this recipe from.

This is a pretty good greasy spoon breakfast joint, and one of the things that I love from here is their Huevos Rancheros plate.

so this wonderful easter morning, seeing as I am alone, I thought I would attempt a re-creation of this.

we started of with 1 layer of a small flour tortilla that had a schmear of some spicy re-fried beans, red enchilada sauce from Hatch, NM, a sprinkle of onions and cheese. there were 3 layers to that.

next, I heated up the #8 cast iron with a little bacon grease and fried up 3 eggs over easy / medium

I do have a vacuum sealer. I buy marinated chicken breast or flavored brats (Whiskey peppercorn, and etc..) and then vacuum seal them.

Took the parents and the GF out for breakfast. Ordered biscuits and gravy (cause its awesome) and the restaurant uses local stuff, well anyway they brought it to me and there was cheese curds on top. That was epic...

Did you guys make the tortillas? If so can we get some more details? I've got a recipe for tortillas that works well but i like having more than one of pretty much everything.

We had a breakfast potluck Friday. Little bit of an unfair advantage with the commercial kitchen, but we had lots of really good food. I made a breakfast pizza with peppered sausage gravy, spicy Italian sausage, scrambled eggs and bacon, mozzarella and cheddar cheese. There were two of them and they did not last 5 min with the warehouse and shop techs hitting the lines first.

made 30 breakfast burritos to put up in the freezer.

30 burrito size tortillas
3.5 - 4 doz eggs scrambled
4 - 5 green bell peppers (fine diced and sautéed)
4 - 5 red bell peppers (fine diced and sautéed)
3 - 4 yellow onions (fine diced and sautéed)
3 - 4 lbs sausage browned
whatever shredded cheese you want to put in

I made these with no jalapenos, because some folks have sensitive spice meters.

Homemade are so much better, as I'm sure you're aware, but it is always one more step in your cooking process. The lady who taught me how can make a batch in about 10-15 minutes from start to finish.... being that me and the rolling pin are still learning how to be friends, it takes me a bit longer!  But when we do anything with tortillas, I just start cooking 45 minutes earlier, we sure love em!

I have done the corn tortillas and they are amazing. would really like to learn flour. Tortilla press makes short work of the extra time involved on corn though.

The coffee and banana were enough, lately I've been drinking a weight loss shake mixed with powered dark chocolate peanut butter and almond milk for breakfast at work and a banana. However its Thursday and it's Biscuits and Gravy day and I've missed the last month and a half of them,except for one day where I got there right before they threw the remaining food away.

Well since you mentioned it...

I cubed up a couple slices of left over porchetta roast and a potato, with 2 scrambled eggs, topped with a blend of cheeses. Alas this morning I was without sriracha, but went with my secondary option of Texas Pete hot sauce.

Sooo... eggs Benedict is one of my most favorite dishes. If I see a new style on a menu, i have to try it... and yours sounds great because I love spicy! Nice job

Regular spaghetti. I just finished the 2nd dish of leftovers for lunch today. Although, I do have a can of Chef Boyardee spaghetti and meatballs in my drawer at work as a backup.
As for the girlfriend, I've been single since September of last year.

My daughter made a cinnamon roll for the family for breakfast today. That’s a 18” lodge cast iron pan it was baked in.

Let’s just say the family was happy and satisfied.   It was good.

What to do with left over easter ham....?


1. Make some homemade buttermilk swim biscuits: https://www.instrupix.com/butter-swim-biscuits/

2. Slice and pan fry some ham slices

3. Make some over easy eggs

4. Make some hollandaise sauce

5. Cut biscuits in half and Assemble.

not one bit, as i put some sort of sauce/condiment on everything.  i did put some ketchup with it after the photo.

It was king crab that was frozen from our christmas crab feast.  The 8 of us easily cleaned 12lbs worth, so we had about 3lbs left over.

I don't even want to know how much that was! I'm paying around $30 a pound for bluefin crab meat, which is the best and what I always eat. Having said that, King Crab is pretty good too, just expensive

The only crab I have eaten is Dungeness. Fresh caught, cooked shell on and cooled immediately. Cleaned and served. Frozen is ok but fresh from pot to table is best.
Problem now is the area of Puget Sound we live near has been closed for years. Need to load up the gear and head to an open area and catch a few for dinner.

I prefer fresh caught like you said bob, but for the price i paid at christmas time, there was no way i was going to let that go to waste.  i was actually saving it for when i make my cioppino, but due to recent life events, that got pushed off for a while.
