I have a few roosters in the freezer and they are not really good for frying. I decided to make some soup out of one of them.
I don't measure anything so I took some pictures as I went to show how much I used.

Start out with a big pot full of water. Put the chicken in it to boil until the met falls off the bone. I cut the legs and thighs off so it would cook more evenly. While the chicken is cooking. I like garlic so I put in a couple cloves. The easy way to peel garlic is to put it in a jar and shake vigorously. Then separate the cloves from the peels. Then you can tore the left over cloves in that jar for future use. I took a video of this part but I messed it up. It disappeared. Now the chicken is done so remove the chicken from the boiling water and put the Vegitable mixture in. I put in 4 bay leaves. Salt and pepper to taste. I don't use much. Interesting that most soups nowadays (commercial) are devoid of many health benefits because there is too little time spent boiling the carcass and bones. That is a wonderful source of glucosimine and is great ofr your joints.
Making your own stock and reducing with bones and carcass in is a great way to maximize your money, have healthier soups and dishes and it can be frozen in cubes to drop into dishes as needed right from the freezer

Looks good! We have a ham bone that will be pea soup in a day or so. The wife is always making chicken soup from cooked chickens. Its so good and as TRN says so much better than anything canned. Plus you can add whatever you have on hand so not wasting what otherwise might get spoiled or tossed out.
My wife is a label reader and paranoid about the additives in stuff so we've just started buying dried beans (which is great in my mind cause they are so much cheaper). She makes a Tuscan bean soup with white beans....mmm....like a pea soup in that some of them break up completely and thicken the broth. That and some crusty bread and I am gtg! Homemade soup is awesome! :likebutton:
