Title: STX INTERNATIONAL DEHYDRATOR 1200W-XLS

So I settled on an STX International Dehydrator  that has a 1200W coil.  It has 10 trays, all stainless steel and a detachable coil/fan assembly.

The 16oz water bottle is there for size comparison, and this thing is BIG!

The first thing i am going to try is roma (or plumb) tomatoes to make tomato powder.

Interesting Nate, so what’s the intended goal? Just to be able to process more garden stuffz or as a way to put more long term foods up?

8 hours later, i got about 2/3 cup of tomato powder.  I started with roughly 3.5lbs of roma tomatoes.  I think i could have let it run a bit longer, as there are a few bigger chunks left.

Now i just have to get some oxygen and moisture absorbers.

I assume you dropped it into a blender and grind it up? How is the flavor ?

A blender is one way to do it, but i have a small food processor that i start with and then moved to a spice grinder to finish it.

Another option if you are going for powder at the end is to blend prior to putting it in the dehydrator. You can use silpat(silicon sheets) to spread it out on.  You would probably get a more uniform drying and could grind it easier afterward. I think....

Bake first, run through sieve, then spread... ??  my thinking is taking a homemade sauce and dehydrating rest of the moisture out. Lots more work though.

Cool. Also consider Mylar bags with a bag sealer for longer term storage

Nate,

1, jealous. Tomato powder has so many culinary applications I can't even think about what I'd do with it.
2, I agree with the puree aspect of uniformity, but with the loss of rather than concentration of the tomato water I would think the flavor might be lessened.
3, hindsight is 20/20 but did you consider freeze drying and then obliterating in the grinder?
